
Petit Four Sec Cakes
Features impressive fancy cakes. Petits fours were traditionally made in the 18th century when coal-fired brick ovens cooled to take advantage of their stored heat. Petit Four Sec ("dry") were dainty biscuits, baked meringues, macaroons, and puff pastries.
Based on an illustration made for professional bakers in the 1870s by Maclaren and Sons, which we have carefully restored and enhanced.
