
Petit Four Glaces Cakes
Features impressive fancy cakes. Petits fours were traditionally made in the 18th century during the cooling process of coal-fired brick ovens to take advantage of their stored heat. Glacé ("glazed") petit four were iced or decorated tiny cakes covered in fondant or icing, small éclairs, and tartlets.
Based on an illustration made for professional bakers in the 1870s by Maclaren and Sons, which we have carefully restored and enhanced.
